Fresh Vegetable Chili

I LOVE me a good chili recipe. I got into one of my "the house is crowded, let's get rid of some stuff" moods this past Saturday. That purge included a vegetable drawer clean out. I have been blessed with a friend who goes to the MOM (Market on the Move) events for me, and grabs TONS of vegetables. If you have not heard of this, its an amazing deal! $10 for up to 60lbs of produce. Just google "Market on the Move" and it will take you to the information. I found a lot of veggies that needed to be used, including some zucchini, yellow onions, and fresh roma tomatoes. I decided to make some chili! It turned out remarkably well. Pardon the inaccuracy of measurements, it was a "throw it together" kind of meal, but one I will for sure make again! Ingredients: 1 lb ground beef 1 yellow onion, chopped 1 tbsp olive oil 4 roma tomatoes, chopped 2 zucchini squash, cut into small pieces 2 - 14oz cans of kidney beans 2- 14oz cans of pinto beans 1/2 bunch cilantro, chopped 2- 14 oz cans diced tomatoes/ green chiles 2 tsp cumin couple shakes of the chili powder container some garlic salt some pepper to taste some salt to taste *in a large pot, cook the onions and ground beef. add the remaining ingredients and simmer for 30 minutes, or until zucchini is cooked. serve with sharp cheddar, sour cream, and green onions on top. So yummy.
